Maple Toast with Brie

 I saw a lady making this maple toast on the internet.  It looked like the perfect small bite for one of those days when we don't want a big meal, just something light.

Maple Toast with Brie 

French bread

butter

maple syrup

brie

Slice a section of French bread into about 1/2 inch slices.  I tried to estimate how many we could actually eat.  As usual, I overestimated.

Place about 3 Tablespoons of butter in a large pan over medium heat.

When it is melted, add a similar amount of maple syrup. Give it a quick stir with a heat proof spoon to evenly spread the mixture over the bottom of the pan. 

Quickly place all the slices of bread flat on the melted butter and syrup mixture.  While that heats, cut a few thin strips of the brie.  The brie I bought was super creamy and a firmer brie may have sliced better.

After a few minutes, turn the bread rounds over.  If all the butter and maple has been absorbed, add a bit more of each between the gaps of the bread.

Flip the rounds again. You want to toast the bread a dark golden color, but they may burn if you don't flip them over every few minutes. My toast rounds got darker in the center of the pan, so I rotated them to the edges.  

When both sides are golden, carefully remove from the pan and place on a plate.

Place a small rectangle of brie on the toast.  

Serve.

These were buttery, sweet and the creamy savory bite of brie balanced it nicely.  

I served them with a selection of fruit. It was a perfect summer dinner!
